Carrot Ginger Rice


After making the cumin lime rice, I felt like making another rice dish with the nice spicy character.  I happened to have a bottle of organic natural carrot juice in the fridge, so I decided to make the rice with the carrot juice and some spices.

It came out so wonderful!!!

I basically cooked the rice with some aromatic spices/herbs, including cumin seeds, curry powder, ginger, garlic, bay leaves, and the only liquid I used was the straight carrot juice (and the butter which was used for sauteing the onion).

When I told my husband that the only liquid used to cook this rice dish was basically just the carrot juice, he was so surprised.  There was no "veggie" smell in the rice, but it was rather so wonderful aromatic (with the curry powder, etc.) and the flavor was really natural and gorgeous.  He loved it so much and he had 3 large bowls  of the rice.

If you want to make it into a main dish, you can cook some protein (such as chicken, shrimp, etc.) with the rice.  I think that even kids who don't like carrot would love this dish, because it really taste so good without tasting the distinctive carrot-like flavor.
