Donabe microwave dish...Salt-marinated steam chicken with lemon-scallion sauce


Yes, this whole dish was cooked in microwave, and it tastes seriously delicious!
It's all thanks to this wonderful microwavable donabe, TOCHINSAI.

Here's how you do it...

Salt-koji (or just salt) marinated chicken breasts were set in Tochinsai with scallion, ginger, an garlic. Chinese rice wine (or sake) and water were added.

Tochinsai was covered with lid and steamed in microwave for 6-7 minutes. The aroma was just gorgeous. The precious cooking broth was used for making the sauce. Lemon juice, minced scallion, ginger, garlic, etc., were added to complete the sauce.

Tochinsai skillet was emptied and sliced satsuma-imo (Japanese sweet yam) and shiitake mushrooms were added. They were cooked together in the microwave for about 4 minutes.

They were all decorated in a platter, garnished with cilantro, and served with the sauce. It was so easy, quick, and absolutely delicious! Chicken was cooked so tender and juicy. Tochinsai is amazing.
