Birthday wine...Jacques Selosse Champagne Brut Rose


For my birthday, this year, I opened one of my favorite wines...Jacques Selosse, Champagne Brut Rose. The sensation of the initial sip of this rose Champagne was just as exciting as the last times I had it. The aroma of honey, rose petals, berries, herbs, earth, brioche, etc., with the super fine mousse, minerals, honey (dosage is 6g/L) on the palate, and very long finish. The longer this wine rests in a Chablis glass (you never want to drink Selosse wine in flute, because their wines are so complex), the more it became complex.

This wine was disgorged on February 15, 2008. Only 6,000 bottles were produced. 93% Chardonnay (from his grand cru vineyards in Aviz) plus 7% Pinot Noir from Ambonnay (I believe this vintage was still sourced from Egly-Ouriet, but now Anselme Selosse owns his own in the same appellation).

I opened this wine at one of my favorite local hangouts, Cliff's Edge, in Silverlake. This place is like a urban oasis with the beautiful outdoor patio, and the food is always wonderful. We ordered many dishes (but I got too carried away to take pictures of most of the dishes!) and everything was nice. Their flourless chocolate cake was so fluffy and it was one of the best I've had (the picture was taken right before I finished it completely)!
