Homemade pickled "kizami" ginger


If you go to a Japanese grocery store, you can normally find two types of pickled ginger. One is thinly sliced version (so called "gari" shoga, which is typically served with sushi), and the other is shredded version ("kizami" shoga...normally in bright red).

Pickled ginger can be served with a wide variety of dishes as a condiment. It's easy to just use the purchased kind, but the homemade version taste so much better.
